Pumpkin, spice and everything nice.
If you love a Pumpkin Spice Latte, but you are eating healthy this holiday season try this delicious Vegan Pumpkin Spice Creamer recipe.
¾ C raw unsalted cashews, soaked and drained (cover with water and soak at least 2 hours or overnight; drain and discard water)
1 ½ cups water
2-3 TB unsweetened canned pumpkin
1 ½ TB maple syrup
½ tsp pumpkin pie spice
½ tsp minced fresh ginger
½ tsp vanilla extract
Pinch of sea salt
Throw everything in the ingredients and blast on high until smooth and creamy. For an extra smooth consistency, pour mixture through a strainer.
