Lemon Pepper Mahi Mahi

1 lb. Mahi Mahi

1 Tbsp lemon pepper (see recipe below)

1 Tbsp lemon juice per pound of fish

1 Tbsp melted butter or olive oil per pound of fish

Preheat oven to 400 F degrees. Top Mahi Mahi with lemon pepper, lemon juice, and melted butter or olive oil. Bake for 15 minutes. Broil for a few minutes to crisp up fish before serving. Serve with a veggie and whole grain carb.

Lemon Pepper Recipes

¼ cup lemon zest *

¼ cup coarse ground pepper

1 Tbsp sea salt

1-½ tsp garlic powder

1-½ tsp onion powder

Combine and store in a cool, dry place.

* Use fresh zest immediately or dry in an oven at 170 F degrees for 20-25 minutes.
