Grilled Artichokes with Aioli

Ingredients:
4 large artichokes
Olive oil
Salt and pepper
Lemon Aioli (see recipe below)
Directions:
1. Cut off woody portion of stem and break off tough outside leaves.
2. Place artichokes in a steamer insert with about 2-inches of water. Simmer until hearts are tender about 35-45 minutes. Allow to cool.
3. Cut artichokes in half lengthwise and remove thistles with a spoon.
4. Brush with olive oil. Season with salt and pepper or lemon pepper.
5. Grill artichokes until golden on the surface and heated through about 5 to 10 minutes.
6. Serve with Lemon Aioli.
Lemon Aioli
1 cup mayonnaise
1 Tbsp fresh lemon juice
2 tsp lemon zest
1 garlic clove, crushed
Salt to taste
Combine all ingredients.
